M3 nut: 14 pcs
M3 recessed head 16 mm: 8 pcs
M3 recessed head 30 mm: 6 pcs

There seems to be some confusion about the nominal length of the screw. It is alway the depth beyond the workpiece surface, aka how deep does the hole need to be. For a countersunk screw with a flat head, this amounts to the overall length, including the head. 16mm is too short. You'll need 16mm thread length + head = 18mm.
The 30mm screws will work fine.

In the case of a countersunk screw, the head must also be included in the length of the screw.

exactly, and the 16mm countersunk screws I bought did not reach the nuts.
Reverted to 20mm, they are sticking out the back by 2mm.
therefore 18mm M3, countersunk.

The 3mm x 16mm screws are about 2mm too short, not sure if this is a problem this this design or with the version of the pastamatic that I have?
